Better Homes And Gardens Chicken And Wild Rice Soup
This soup is delicious! It is super-easy to make; I just needed extra time to boil and shred the chicken, as well as 55 min to cook the rice (I used Lundberg Wild Blend rice since I had it in the pantry). This is a very earthy, hearty soup with the mushrooms and wild rice. It needed a dash more salt to elevate the flavors; we added more salt after serving the soup in order to avoid over-seasoning the pot. I will definitely try this recipe again using leftover turkey from Thanksgiving. The only question mark for me was how much of the cooked rice to add to the soup. I netted about 3 cups of cooked rice, so I initially added just 1 cup of rice to the soup. Because it didn't look like enough rice relative to the chicken, I added another cup, then the last cup, which turned out to be a perfect amount.
This was a great dinner enjoyed by kids and parents alike. I worked with what I had in the house so did make a substitution (subbed fennel stalks for celery). I also made some changes based on previous suggestions. I added garlic, garlic powder, onion powder, lemon zest, fresh rosemary sprigs and fresh oregano sprigs, as well as a chicken boullion cube. I also made wild rice and added it in at the end as recommended. So good! Tasted like Thanksgiving in a bowl. The only change I would make is to add more chicken stock to make it more of a soup. This was more of a thick stew (which was great, but not what I was expecting). Fed a family of four with some leftovers. Would make this again!
This is a delicous soup. I wanted to pin it but it seems that because there is no picture just a video it won't save. It could just be me but I want to be able to get this recipe quickly from pinterest to make it again. Any help is appreciated.
Nice soup for a winters day! I did use Lundeberg's Wild rice Blend instead of wild rice-cost factor-wild rice is not inexpensive-but the Lundeberg's wild rice blend was available at Costco-so I am relieved that I like this soup since I eat turkey year round and I now have a big bag of rice- I would have tried the winter 2020 recipe but had an abundance of carrots and few green beans so I did this one instead- didn't add parsley till it was served and did add a squeeze of lemon again as it was being served-thanks for the great recipes!
I did use 1/2 can of TJ's low fat coconut milk instead of sour cream, Uncle Ben's microwave wild rice pouch, small can of sliced mushrooms and rotisserie chicken. Other than that I stuck to the recipe pretty much. Think I will shred some baby spinach when I reheat leftovers. Good basic recipe that can be altered by the spices and additions.
Hubby and I made this soup today, and it was delicious! I had used the turkey bones to make stock, so I used that instead of chicken broth. I was shopping in a hurry between snow storms, and none of the three stores I where I shopped had wild rice; so I used black rice instead. Since we were having bread pudding for dessert, we just ate the soup with 2 or 3 saltines. Very satisfying on a cold, windy winter's day!
We loved this soup. Left out shallots and celery (just didn't have them) and used 1/4 cup heavy cream instead of sour cream.
I made this with chicken and it was delicious. I also made it with just mushrooms and wild rice soup! Why do i need reduced fat sour cream. Would regular make it curdle?
Such a great soup! Used homemade stock, and, Uncle Ben's wild rice with seasoning, added the sage. This was Quick and warming. For the, creaminess, I used left over whipped potatoes made with, garlic, earth balance and soy beverage! Yes I will make this again!raf tip 1, if using the mix, skip the salt! tip 2, I use the potatoes as I can not do dairy! Works a treat!!!!!raf
My daughter and I loved the recipe, making it again this week. Used Pre-cooked / canned Wild Rice to speed up the process. Not knowing the conversion, I just used the one whole can.
If I am adding cooked wild rice, how much should I add? I couldn't find instant wild rice, so bought regular. Having difficulty finding equivalent or conversions for instant wild rice. I have not made it yet, so my rating is only on the directions!

I thought this was delicious and I was happy to find a good recipe for soup that was healthy. I gave 4 stars because I think it could use some more seasoning as it is a tad on the bland side. Other than that, this is definitely a keeper! Thank you!
This is an easy, tasty and nutritious soup , well worth keeping as your standard. I made the following revisions to suit my taste: 1) turkey bone broth replaced chicken broth; 2) 1/2 cup yellow onions and 1 large clove minced garlic; 3) 1/2 tsp each sage and rosemary; 4) I, too, used an Uncle Ben rice (Brown and Wild Rice).
This was delicious! Using real turkey stock makes the dish special. I omitted the sour cream, which I imagine would have really added to the texture and creaminess. I added a pinch of turmeric-sounds weird, but it makes it taste a little bit more like cream of turkey pot pie. Also used white pepper because it blends so well in soup.
No changes... Only Xtra pepper
This is one of the BEST soups I have ever had. The only change was that I made my own broth. I threw in two handfuls of baby spinach leaves at the way end. Super fast to the table and the family loved it.
Totally delish! Very filling too. Used onion, not shallots, used rotisserie chicken, and homemade chicken broth. Couldn't find wild rice, so used Uncle Ben's long grain and wild rice blend. This is definitely a repeat recipe.
Excellent flavor and quick to prepare. The entire loved it, including a husband who doesn't like soup.

This was an Awesome meal,I do have high blood pressure so this meal will be on the menu from now on..
My husband's favorite soup. This is my husband's favorite soup. I use wild turkey instead of domestic, add the packet in the Uncle Ben's Wild Rice and add our homemade pepper for spices. Other than those few items, I don't change a thing.
This recipe is really tasty! I read other reviews that said it needed more flavor, so I added about a teaspoon of Mrs. Dash's garlic and herb spice and a few shakes of garlic powder. It came out great! I also used rotisserie chicken which has a good deal of salt/flavor. Yum!
awesome I loved this!!.. i didn't have carrots and it still turned out really good. It does need just a little more salt, but i would only add it to the serving you are going to eat as to not OVER salt the whole pot of soup. Pros: filling, easy
I made this last night to use up the last of our Thanksgiving turkey and it was fantastic. I did add 2c extra broth and 1t of herbs de provence. Also I got some store brand wild rice mix similar to rice-a-roni and tossed the sesoning packet in with the flour. I forgot the parsley but I don't think we missed it! I think next time I'll add some spinach in just because I love spinach in soup. This reheats very well!
This is such a good soup! I used chicken stock instead of broth and for the rice I used one box of Uncle Ben's long grain and wild rice fast cooking blend. I also added about 1/3 to 1/2 of the spice packet that comes with the rice to the soup. So delicious!

This recipe is excellent. I did do a few things differently that made it a little more flavorful, however. I didn't use instant/quick cook wild rice. Instead I used Trader Joe's Wild Rice and boiled it with the turkey, covered, for about 20 minutes while I cut up the veggies. This made the rice, turkey and broth very flavorful. After I also added a cup of water to the mix when I added in the veggies. Delicious!

This is a very good base recipe. I did not measure my ingredients. I ended up needing to add a flour/water slurry to thicken it a bit more, however this was likely due to my having not measured the other ingredients. The boyfriend said it was delicious and all he said is it needed more black pepper. I did not tell him it was supposed to be healthy. He even packed up two bowls to take to work tomorrow. Next time, I will try to make some whole grain bread bowls to serve the soup in or else I'll be sure to have a good crusty, grainy bread with butter to serve with it. Sarah, Minneapolis, MN
My daughter made this for dinner last night. She is not a cook by any means. It was fabulous! She used baked chicken cut into very small cubes. She was so proud of herself (as were we)! The flavors were so good that even our picky 15 year old ate it all! We will double the recipe next time for leftovers!
This was really easy and good. I used the box of Uncle Ben's long grain & wild rice, incl the season pkg. The only adjust. was the broth, I ended up using more because the soup was so thick. I skipped the sour cream....don't need it. I will definitely will make this again.
